Xanthan Gum is made from the outer layer of a tiny, inactive bacterium called Xanthomonas campestris. It is an excellent all-purpose thickener for dressings, gravies, and sauces. Its unique binding ability makes it the ideal substitute for gluten in gluten-free baking.
